Apple muffins
Ingredients
130g self-rising flour
170g granulated sugar
4 medium-sized eggs (200g)
20 ml brandy
3 Golden apples, diced
½ tsp cinnamon powder
50g unsalted butter
50g brown sugar
Preparation
1. Place the eggs, sugar and brandy in the mixing bowl and beat with the whisk attachment of the mixer) at medium speed, until fluffy and white. Add the flour (sifted) and stir gently with a silicone spatula.
2. In a pan, put the butter and place over medium heat to melt. Add cinnamon and sugar and mix well. Add apples and stir again.
3. In a muffin pan, put cupcake liners or parchment paper. Fill the liners halfway with the dough and add a spoonful of the apple mixture.
4. Bake in preheated oven on the middle shelf at 170°C for 25 minutes.
