{"id":2133,"date":"2015-05-11T11:20:44","date_gmt":"2015-05-11T11:20:44","guid":{"rendered":"http:\/\/www.mykonos-flora.gr\/en\/%cf%88%ce%b1%cf%81%ce%bf%ce%ba%ce%b5%cf%86%cf%84%ce%b5%ce%b4%ce%ac%ce%ba%ce%b9%ce%b1\/"},"modified":"2023-06-12T14:07:39","modified_gmt":"2023-06-12T14:07:39","slug":"fish-balls","status":"publish","type":"post","link":"https:\/\/mykonos-flora.gr\/en\/fish-balls\/","title":{"rendered":"Fish Balls"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong>For the fish balls<\/strong><br \/>\n600 g cod fillet<br \/>\n1 onion<br \/>\n\u00bd bunch of parsley<br \/>\n2 egg whites<br \/>\n4 slices day-old bread<br \/>\nbread flour<br \/>\nsunflower oil<\/p>\n<p>&nbsp;<\/p>\n<p><strong>For the sundried tomato sauce<\/strong><br \/>\n250 g sundried cherry tomatoes<br \/>\n1 onion<br \/>\n10 sundried tomatoes<br \/>\n1 tbsp capers<br \/>\n6 black olives<br \/>\n4 tbsp olive oil<br \/>\nsalt and pepper<br \/>\n\u00bd bunch of large leaf basil<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<div class=\"one\"><\/div>\n<div class=\"three\">\n<p><b>Make the fish balls<\/b><\/p>\n<p>Finely chop the fish with a knife and place it in a bowl. Finely chop the onion and parsley. Place chunks of bread into the food processor to make breadcrumbs and mix them with the fish, egg whites, onion, parsley and a bit of salt.<\/p>\n<p>Knead the mixture together with your hands. If it is too wet, add some rusk powder. Cover the mixture with a plastic wrap and place it in the fridge for at least 3 hours. Remove the mixture from the refrigerator and shape it into meatballs.<\/p>\n<p>Put the flour on a plate and roll the meatballs. Put the oil in a nonstick skillet and heat it over high heat. After it&#8217;s heated up, shake off any excess flour and fry the meatballs until they get a nice golden color. Remove them from the skillet using a slotted spoon and place them in a plate where you have laid absorbent kitchen paper.<\/p>\n<p><b>Make the sauce<\/b><\/p>\n<p>Drain the sundried tomatoes from oil, pat them dry with absorbent kitchen paper and chop them finely. Cut the cherry tomatoes in quarters, finely chop the olives and onion. Place a skillet over medium heat, add oil and when it&#8217;s heated up add the onion and saut\u00e9 for 2-3 min. Then add the cherry tomatoes, dried tomato, olives and capers. Allow sauce to boil for 10 min.
