{"id":2243,"date":"2015-05-11T09:27:32","date_gmt":"2015-05-11T09:27:32","guid":{"rendered":"http:\/\/www.mykonos-flora.gr\/en\/%cf%80%ce%b5%cf%83%ce%ba%ce%b1%ce%bd%ce%b4%cf%81%ce%af%cf%84%cf%83%ce%b1-%cf%83%ce%b5-%ce%ba%cf%81%ce%bf%cf%8d%cf%83%cf%84%ce%b1-%ce%bc%cf%80%ce%b1%cf%87%ce%b1%cf%81%ce%b9%ce%ba%cf%8e%ce%bd\/"},"modified":"2023-06-12T14:19:45","modified_gmt":"2023-06-12T14:19:45","slug":"spice-crusted-monkfish","status":"publish","type":"post","link":"https:\/\/mykonos-flora.gr\/en\/spice-crusted-monkfish\/","title":{"rendered":"Spice-crusted Monkfish"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>For the spice mixture<br \/>\n1 tbsp coriander seeds<br \/>\n1 tbsp cumin seeds<br \/>\n1 tbsp black peppercorns<br \/>\n1 tbsp fennel seeds<br \/>\n1 dried chili<\/p>\n<p><strong>For the fish<\/strong><br \/>\n800g monkfish<br \/>\n1 tbsp cottonseed oil<br \/>\nFor the first marinade<br \/>\n1 tbsp grated ginger<br \/>\n2 cloves of garlic, finely chopped<br \/>\n2 tsp black pepper<br \/>\n2 tbsp lemon juice<br \/>\nsalt<\/p>\n<p><strong>For the second marinade<\/strong><br \/>\n30g strained yogurt<br \/>\n15g grated ginger<br \/>\n2 green chillies, finely chopped<br \/>\n15g coriander, finely chopped<br \/>\n15ml sour cream<\/p>\n<p><strong>For the tomato sauce<\/strong><br \/>\n800g ripe tomatoes<br \/>\n60ml olive oil<br \/>\n1 bay leaf<br \/>\n2 tsp grated ginger<br \/>\n2 cloves of garlic, crushed<br \/>\n1 tsp cumin powder<br \/>\n1 tsp ground fennel<br \/>\n1 tsp red chilli powder<br \/>\n60g lemongrass<br \/>\n300ml coconut milk<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<p><strong>For the spice mixture<\/strong><br \/>\nPut all ingredients in a pan and place over low heat. Dry-roast the spices until they get a light color and release their aroma. Grind the spices in a mortar or use a food processor.<\/p>\n<p><strong>For the first marinade<\/strong><br \/>\nPlace the fish in a baking dish. In a bowl, combine all the ingredients for the marinade and coat the fish with the mixture. Wrap it in clear film and put in the refrigerator for 30 minutes.<\/p>\n<p><strong>For the second marinade<\/strong><br \/>\nPut all ingredients in a small bowl and add cream last. Cover with clear film and put in the refrigerator.<\/p>\n<p><strong>For the tomato sauce<\/strong><br \/>\nPur\u00e9e the tomatoes in a blender and pass them through a fine strainer. Heat the olive oil in a frying pan over medium-high heat, add the bay leaf, ginger and garlic and saut\u00e9 for about 1&#8242;. Then add the tomatoes, cumin, fennel, chili and lemongrass and cook, stirring occasionally, for about 7-8 &#8216;. Add the coconut milk, taste and adjust seasonings with salt and continue cooking for another 3-4 &#8216;.<\/p>\n<p><strong>For the fish<\/strong><br \/>\nPreheat oven to 200\u00b0C. Take the fish and the second marinade out of the refrigerator and let them come to room temperature. Spread the spice blend over the fish in the pan and add the second marinade. Bake for 12 to 14 &#8216;.
