{"id":5512,"date":"2016-09-14T12:43:35","date_gmt":"2016-09-14T10:43:35","guid":{"rendered":"http:\/\/www.mykonos-flora.gr\/en\/ayga-benedict-me-avocado-kai-prosouto\/"},"modified":"2023-06-12T13:46:28","modified_gmt":"2023-06-12T13:46:28","slug":"eggs-benedict-with-avocado-and-prosciutto","status":"publish","type":"post","link":"https:\/\/mykonos-flora.gr\/en\/eggs-benedict-with-avocado-and-prosciutto\/","title":{"rendered":"Eggs Benedict with avocado and prosciutto"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>(for 2 people)<\/p>\n<p>4 eggs<br \/>\n1 avocado<br \/>\n4 slices of prosciutto<\/p>\n<p><span style=\"text-decoration: underline;\">For the English muffins:<\/span><\/p>\n<p>60g butter<br \/>\n7g salt<br \/>\n7g yeast<br \/>\n1 tbsp sugar<br \/>\n450g fresh milk<br \/>\n150g flour<\/p>\n<p><span style=\"text-decoration: underline;\">For the sauce Hollandaise:<\/span><\/p>\n<p>300g butter<br \/>\n2 eggs<br \/>\n1 tsp white vinegar<br \/>\n1 tsp Dijon mustard<br \/>\nSalt and pepper<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<p><strong>Step 1: We begin with the buns<\/strong><\/p>\n<p>\u2022 Put the butter and sugar to melt together and immediately add the milk, yeast and egg, stirring with wire whisk. Leave aside for 3-4 minutes.<br \/>\n\u2022 In a bowl, mix the flour and salt and pour in the milk mixture. Continue stirring, leaving the mixture in a warm place for an hour, until it swells.<br \/>\n\u2022 Heat a frying pan and add a bit of olive oil. Pour in a full tablespoon for each muffin and bake each side for 4 minutes.<br \/>\n\u2022 Allow to cool.<\/p>\n<p><strong>Step&nbsp;2: For the sauce Hollandaise<\/strong><\/p>\n<p>\u2022 Melt the butter. Until it&#8217;s fully melted, beat the eggs and vinegar in a bowl with the wire whisk.<br \/>\n\u2022 Remove the butter from heat and, hot as it is, pour it slowly into the egg mixture, beating constantly with the wire.<br \/>\n\u2022 Add the mustard, salt and pepper and leave aside.<\/p>\n<p><strong>Step&nbsp;3:<\/strong><\/p>\n<p>\u2022 In a saucepan, boil water with 2-3 tablespoons of vinegar.<br \/>\n\u2022 Place the eggs into small bowls and lower the heat when the water comes to a boil.<br \/>\n\u2022 Add the eggs carefully and leave them for 4 minutes.<\/p>\n<p><strong>Step&nbsp;4:<\/strong><\/p>\n<p>\u2022 Open the buns in half and put them in a dish.<br \/>\n\u2022 Cut the avocado into thin slices, and carefully place them on the buns.<br \/>\n\u2022 Put the poached eggs and 3-4 tablespoons of Hollandaise sauce (per serving) on top of the buns.<br \/>\n\u2022 Serve with the slices of prosciutto and freshly ground pepper.<\/p>\n<p><strong>THE&nbsp;LIGHT&nbsp;VERSION<\/strong><\/p>\n<p>Replace the bacon with smoked turkey or ham. Use yogurt and a smaller quantity of butter for the sauce.
