Raclette is a traditional Swiss dish, also popular in the Savoy region of France, where the cheese is heated and the melted layer is scraped directly onto the plate. Raclette du Valais is the Swiss cheese specifically made for this dish. It can be melted under a special heating lamp, in modern electric raclette machines with small pans, or even by the fireplace for true enthusiasts.
Pair it with boiled potatoes, pickled gherkins, and cured meats. The ideal drink pairing is hot black tea, which aids digestion, as well as Kirsch or a crisp white wine such as Riesling.
