Mimolette vieille 12 mois

A pasteurized cow’s milk cheese traditionally produced in Lille and the surrounding regions of France, also known as Boule de Lille. Its vibrant orange color comes from the natural dye annatto. It can be enjoyed young (around 4 months), but also ages beautifully (up to 24 months), developing a firmer texture with crystals and a richer, more buttery flavor. It is famously known as the favorite cheese of French president Charles de Gaulle!
